Pasta should be consumed on the day of delivery or the following day. Alternatively please freeze the pasta, which can be cooked directly from frozen.
We have been making fresh homemade pasta since we first opened our delicatessen in Soho in 1944.
Tagliatelle are long narrow ribbons, which can be served with a variety of sauces, though the classic combination is with a homemade Bolognese ragu. It also works well with creamy sauces such as our Sausage and Porcini Norcina sauce or fresh vegetables such as artichokes, lemon and butter, mushrooms and cream or asparagus. Good in baked pasta pies / pasta al forno.
500g - 3 - 4 portions (115g - 150g per person)
Bring a pan of generously salted water to the boil.
Once boiling, reduce to a medium simmer. Add Tagliatelle and cook for around 2 - 3 minutes until al dente
Add to pan of cooked sauce and mix together. Add a small amount of pasta water if necessary. Combine and season with salt and pepper to taste.
Plate up and finish with freshly grated Parmigiano Reggiano.
Store in fridge.
Consume within 3 days.
Our fresh pasta can be frozen for up to 3 months. Cook directly from frozen. Do not defrost. When cooking from frozen add an extra minute or so to normal cooking time.
