The green tomatoes of Salento are cultivated in open field in the month of May and are picked by hand in July, when the tomatoes are still green. They are washed, selected, cut into slices and laid to mature under salt.

I Contadini's farm was born in Ugento in Lecce province around 60 years ago. They grow their own vegetables with a technique called Integrated Production. Vegetables like courgette, pepperoni, artichokes, tomatoes and more are later transformed from a fresh state to become sauces and condiments without the use of preservatives of any kind, following traditional recipes for preparation and preservation.

Perfect for original bruschetta with toasted bread. Very good also with soft cheeses. Try with pasta, rocket and some Parmigiano Reggiano.
