Porchetta is one of the most flavoursome and celebrated of Italian cooked meats. It originates from a restricted area of production a short distance from Rome and is considered one of the "must try" delicacies for visitors to the area. It can be recognised from its crisp layer of crackling, and the rolled internal meat ranging in colour from white to pink, strongly flavoured with rosemary, black pepper, and garlic.
Leopari is a family-owned business founded in Rome in 1947. They have been specialising in the production of porchetta for decades and established a yearly festival celebrating the art of making porchetta for the past 60 years.
Best enjoyed on its own or served in buttered ciabatta bread.
